David Chang of Momofuku fame is one of the most inventive chefs I’ve ever met. When I first met David, he took me to his Momofuku Noodle Bar and he ordered things I would not normally order. It was after having devoured the pork steamed buns (the best in NYC), hamachi and slices of steak that I understood his genius. Of course, David also creates his own kimchi in his own eclectic way.
